Chicken Enchiladas

This week I decided to start a menu plan which I will make every Friday night and go shopping for on Saturday. My first planned mean was chicken enchiladas. I used the Hillbilly housewife’s recipe for flour tortillas. I didn’t roll them out thin enough but hopefully next time I will. I used a recipe for enchiladas from cooks.com but I deviated from it so much it was a pretty much a different recipe. I used whatever enchilada filling was left over to make the rice too.

It was really good. Today we will be eating light and lazy it is soup and salad day.
